Bikini Recipe

Makes enough for 10 guests

Ingredients for the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Put all the ingredients inside a pan, bring to a light boil, agitating until the sugar dissolves. Next, remove from the heat and let it to cool entirely. Pour into an sealable bottle, close it keeping it in the refrigerator, where it will keep for up to one month.

Preparing the Batch Mix: Combine all the spirits and syrup in a sizeable container, allow it to infuse for an hour, then filter it best through a fine cloth, to ensure it's fully clarified.

To serve: Pour 85ml from the batch mix into your cocktail shaker filled with ice, and stir carefully for about 60 seconds until cold. Pour to a frosted cocktail glass or a similar vessel, decorate with some cranberries and finish with a brief mist with the mandarin essence above the glass.
